Cheesecake
- 3 digestive biscuits
- 20g Flora Lighter
- 150g quark
- 10g icing sugar
Apple and plum compote
- 1 large cooking apple
- 5 small plums
- 100ml water
- ½ tsp cinnamon
- 2 tsp brown sugar
- Blitz the biscuits in a food processor until fine crumbs or alternatively place them in a plastic bag, tie the end and carefully break them up with a rolling pin.
- Carefully melt the Flora Lighter on the hob or in the microwave and combine this with the biscuit crumbs. Press the mixture into the bottom of two small ramekin dishes.
- Mix the quark with the icing sugar and place on top of the biscuit in the ramekins. Place in the fridge to set.
- While the cheesecake is setting make the compote. Cut the apple and plums into pieces about 2cm squared. Place them in a saucepan along with 100ml water, the cinnamon and the sugar.
- Simmer, stirring occasionally until the apple starts to break down and the compote thickens – this takes about 15 minutes.
- Set the compote aside to cool. When you are ready to eat the cheesecakes, put a spoonful of compote onto each ramekin and serve.
- There will be plenty of compote leftover to enjoy on your morning cereal or with low-fat yogurt as a healthy snack.
