Pulled Mushrooms with Bourbon Molasses Barbecue Sauce

Ingredients
 

Barbecue Sauce
  • 2 tablespoons Flora™ Plant Butter Salted
  • 1 small onion, finely chopped
  • 1/2 teaspoon salt
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon smoked paprika
  • 1/4 cup Bourbon
  • 1 15-ounce can tomato sauce
  • 1/4 cup molasses
  • 2 tablespoons maple syrup
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
Mushrooms
  • 16 ounces assorted mushrooms, sliced (we used a combination of oyster, shiitake and portobello)
  • 1 medium onion, sliced
  • 2 tablespoons Flora™ Plant Butter Salted
  • 3 cloves garlic, sliced
  • 1/2 to 1 cup vegetable broth
  • 2 tablespoons chopped fresh thyme
  • 6 whole grain hamburger buns
  • 1 1/2 cups arugula

      Instructions
       

      Barbecue Sauce
      1. Melt Flora Plant Butter in medium saucepan and cook onion and salt over medium heat 5 minutes or until softened. Add garlic and cook 30 seconds. Add tomato paste and smoked paprika and cook 2 minutes, stirring frequently.
      2. Add bourbon and bring to a boil. Simmer 1 minute. Stir in remaining barbecue sauce ingredients and simmer 15 minutes or until mixture has thickened.
      Mushrooms
      1. Melt Flora Plant Butter in large nonstick skillet and cook onion over medium heat 8 minutes or until tender. Add garlic and cook 1 minute. Add mushrooms and season with salt and pepper. Cook 10 minutes, stirring occasionally or until mushrooms are very tender.
      2. Stir in 1 cup barbecue sauce and 1/2 cup vegetable broth and simmer 5 minutes. If mixture is too thick, add additional vegetable broth. Stir in thyme.
      3. Serve mushrooms on buns with arugula and additional barbecue sauce.
      Time saving Tip: When making the barbecue sauce, make a double batch and store in the refrigerator to use for another time. If you don't have time to make the barbecue sauce, you can use your favorite store-bought sauce. We use a variety of mushrooms when we make this and we include varieties like oyster and shiitake. This helps to give the finished dish an earthy flavor and meaty texture.
