Cajun chicken salad with a honey mustard dressing

Chicken
- 3 skinless and boneless chicken breasts
- 3 tbsp of Cajun seasoning
- 1 lime
- 1 tsp of Flora 100% Natural Ingredients
- olive oil
Salad
- Shredded iceberg lettuce
- Cherry tomatoes
- Red onions
- Black and green olives
- Sweetcorn
- cucumber
- Avocado
- Walnuts
Dressing
- 1 tsp of Dijon mustard
- 2 tbsp of honey
- 5 tbsp of extra virgin olive oil
- 1 tsp of red wine vinegar
- Small pinch of dried oregano
- First start of by making the dressing. Simply add everything together with a pinch of salt and mix well. Give it a taste and adjust if need be, by adding more vinegar, oil or salt, making it to your liking.
- Take the chicken and slice each breast lengthways through the middle and sprinkle with Cajun seasoning. Get a large non-stick frying pan over medium heat and ass a small drizzle of the olive oil and add the Flora margarine. Add the chicken and cook for 4-5 minutes on each side or till cooked through. Once out of the pan squeeze over lime juice.
- Onto a big serving plate, add your salad ingredients and drizzle with some of the dressing. Slice the chicken, place that on top of the salad and finish off with my dressing. Enjoy!
