Chicken & Chips for a wholesome mid-week dinner.

- 4 chicken breasts
- 8 medium potatoes
- 6 TBsp Flora buttery
- 1 tsp sweet paprika
- 2 tbsp mixed herbs
- 2 onions
- salt and pepper
- Preheat the oven to 200°C.
- Melt the Flora Buttery in a small bowl in the microwave, for approximately 25 seconds.
- Roughly chop the onions into large chunks.
- Cut the potatoes into chip shapes, by slicing into 1cm thick slices, then slicing each piece a few times. Add all to a large baking tray, drizzle with half the Flora Buttery, and sprinkle with salt, pepper, 1 TBsp mixed herbs and mix well. Make sure the chips are not on top of one another.
- In the other baking tray, add a small bit of the remaining Flora Buttery and spread over the base. Add the chicken breasts, drizzle with the remaining Flora Buttery and season with salt, pepper, 1 TBsp of mixed herbs and the paprika.
- Add the chopped onion around the chicken and toss in the buttery seasoning using spoons.
- Put both baking trays in the oven for 25 minutes until the chicken is fully cooked and the chips are golden brown. Enjoy!
