Delicious and hearty minestrone soup, perfect for a cold Winter's evening.

- 3 garlic cloves
- 1 red onion
- 2 carrots
- 1 swede
- 2 large sticks of celery
- 1 tin of chopped tomatoes
- 150g macaroni pasta
- 1 vegetable stock cubes approx 40g
- 1 cm slice of Flora salted
- 1 litre of boiling water
- salt and pepper
- 2 tsp mixed herbs
- 2 tsp sugar
- handful of fresh parsley
- handful of green beans
- Finely chop the garlic. Slice the celery and dice the onion. Dice the carrot. Peel then dice the swede. Chop the ends off the green beans and then chop the beans into thirds.
- In a large saucepan, on low-medium heat, melt the Flora Salted, then ad the garlic, onion and celery. Fry for 5-6 minutes until soft.
- Add the carrot, swede, macaroni pasta, chopped tomatoes, green beans, stock cube, boiling water, season with salt, pepper, sugar and the mixed herbs. Mix well, bring to the boil and simmer for 10-15 minutes until the pasta is cooked and softer.
- Serve up with a sprinkle of fresh parsley on top and enjoy!
